That said these are the best chocolate chip cookies I have ever eaten. I like to use white chocolate chips and macadamia nuts to make white chocolate macadamia nut cookies. Those take this to a completely new level.
I had a friend visiting with her 3 girls today and we made the ice cream sandwiches for dessert. The kids loved them.
The batch makes a ton of cookies so only plan on making them if you want a bunch of cookies laying around.
- 1/2 C butter
- 1/2 margarine
- 1 C brown sugar
- 1 C granulated sugar
- 1 egg
- 1T milk
- 2 t vanilla
- 3 1/2 C flour
- 1 t baking soda
- 1 t salt
- 1 C vegetable oil ( see note)
- 1 C corn flakes
- 1 C quick oats
- 1 12 oz. package chocolate chips
- Preheat oven to 350 degrees.
- Cream butter, margarine, and sugars. When smooth stir in the egg, milk and vanilla.
- Sift flour, baking soda, and salt.
- Stir flour into c reamed mixture alternately with oil until mixture is combined. (I only use enough oil to mix).
- Add corn flakes, oats and chocolate chips using enough oil to mix.
- Drop by teaspoonfuls onto cookie sheets. Bake 8-10 minutes or until golden. They bake up nicely at 11 1/2 minutes on a baking stone.
Cool on racks.
To make the ice cream sandwiches gather two similar sized cooled cookies. Take a scoop of softened ice cream and sandwich between the bottoms of the two cookies. Roll in chopped nuts, sprinkles, or candy if desired. Flash freeze and wrap in plastic wrap to eat later. If you don't flash freeze the toppings you roll into the ice cream will be pushed into the cookie when wrapping. Doesn't hurt the taste, just doesn't look as pretty.
